Sub Zeros power and skill should take this fight, and his weapons in particular will prove useful and effective. Additionally, the Hall of Mirrors actually works to his advantage and hinders Android 8.

I'm not convinced. Honestly, by any reasonably scaling, Android 8 is probably too strong for this tier

I don't actually remember much about Android 8, but from what I've read he seems to be either a naive giant or a thoughtless brute - neither which would fair well against the brutality and ninja skills of Sub Zero (who regularly goes up against physicially stronger opponents).

Android 8 was pretty tough, if I recall, if not nearly Android 16/17/18 tough. Not sure if Sub-Zero has the physical capability here.

He has some strength to him, but aside from that I can't find anything putting him on the skill level, or brutality level, of Sub Zero. 

Sub Zero regularly fights multiple cyborgs, and has shown to be able to slice them apart, rip them in two, freeze them solid and more.
