Hum.  Well that's difficult.

Both characters seem more at home in urban settings. If the Saint has a cowboy episode, somebody is going to have to point that out.  I'll wait.

Autolycus is from Ancient Greece, so horses pretty much power the world he lives in. I'm sure he has a day to day familiarity with them and has probably stolen them as needed.

The Saint successfully posed as a Texas rancher in "The Bunco Artists" and also showed the ability to ride in "Teresa".

So he has the base knowledge and skills.

Plus he has the money to hire a team to help him.

He is also not going to draw as much attention to himself by not being completely out of his element, in cowboy country.
