The challenge is a French dish which is difficult to get perfect.

I have not seen the film Chef.  Nor have I seen the Futurama episodes with Elzar.

OK, so just going by the Wiki Page for Chef it reads

And "Gauloise" is of course the French brand of cigarettes.

Therefore, it must be a French restaurant, no?  If so then Carl Casper is an actual head in a French restaurant making classics of French cuisine who goes on to run a food truck for whatever reason.

Carl may have the advantage.

He goes on to run a food truck because he's sad that he doesn't get free reign to experiment with dishes. The head of the restaurant gives him an exact number of dishes that he has to do, in one specific way, for the rest of his working hours. As a true creative man, he gets mad and sets out to work for himself where he actually has reign to do whatever he sets out to do. It's a very nice little tale.
